The jam is made in-house with the exotic yuzu fruit layered over a praline mousse and brown sugar crumble base.
The tartness from the yuzu accentuates the nutty richness of the hazelnut in the praline mousse. The cake is garnished with chocolate pearl crisps, candied lemon zest and milk chocolate shards.
This birthday cake is perfect for 6-8 people and measures 15 x 15cm (6" x 6 inches).
